A Healthy Family is a Happy Family. Tips to eating healthy as a family for 2017.

It's coming up on two years since my husband was diagnosed with stage 4 colon cancer. It was a shock to say the least , him being only 33 at the time. We knew there were going to be major changes in our lives in particular our eating habits.

One big thing that would contribute to his body's healing from such a serious stage of cancer is diet! We watched first hand his entire body go from very sick and diseased to now healthier than ever before, and the main change he made was cutting out all refined sugars and eating little to no meat. There's a whole lot of produce going down in our house!

Naturally we want our children to follow suit and eat whole, plant based foods as the majority of their diets as well to stay healthy and strong. That isn't always easy.
Between the busyness of every day life, and the unrefined palates of young children, we sometimes struggle.

Today I thought I'd share a couple links with you readers that really helped us when we were in need of some kid friendly, healthy diet inspiration.

First off we have Forks Over Knives for kids. Our family received this cookbook for Christmas and I found this website with some fun and easy ideas. We like that the recipes on this site are vegan, but still fairly easy to prepare. My favorite recipe being number 7, for a sweet and simple treat.

This website had my mouth watering as I read through their quick and nutrient rich ideas! I think we'll try number 4 for dinner tomorrow night with plenty of leftovers for lunch then next day. If you haven't tried cauliflower rice yet you absolutely must! It tastes so similar to rice you can hardly tell a difference. A little tip, Trader Joe's sells it in their produce section already "riced" for you. Saves you a lot of preparation time!

Packing school lunches is personally one of my most dreaded tasks ! I'm not sure why, it just seems to be such a chore.
This article from Parents magazine has some great tips of how to make school lunches unique, exciting, healthy and EASY. I loved the pretzel kabobs idea for the days we do send the kids a little meat and cheese in their lunches.

Lastly, I want to share one of our current favorite simple and satisfying dinners. With homework and lessons and practices in the evenings, life gets busy and we need to make our dinner times enjoyable and stress free!

Here's your ingredient list for this noddle bowl dish we all enjoy:
* One package of Thin Noodles of your choice (we use gluten free spaghetti), Cooked And Drained
* 1/4 cup Wheat Free Soy Sauce
* 2 Tablespoons Pure Honey
* 5 cloves Garlic, Minced
* 3 Tablespoons Rice Vinegar
* 4 Tablespoons Pure Sesame Oil
* 1 teaspoon Red Chili Pepper Flakes
* 4 Tablespoons Melted Coconut Oil
* 5 whole Green Onions, Sliced Thin to garnish
* Baked Seasoned Tofu warmed and cut into chunks (we find our favorite kind at Trader Joe's)

Mix together your liquid ingredients, soy sauce, honey, vinegar, sesame oil and melted coconut oil and whisk until well mixed.
Next add your garlic and chili flakes and whisk well again.
Cook your noodles and drain, quickly mix in your sauce and add your warm, baked chunks of pre-seasoned tofu and garnish with your chopped green onion.

Our family has overcome great obstacles in the past couple years. Mike, who is now CANCER FREE, is extremely dedicated to his diet and we are all slowly following his lead. Seven months after his diagnosis, and seven chemo treatments in, we were watching his body die. Mentally and physically, chemo was killing his will to live which was taking his body down with it. One day he just decided he could no longer do chemo. His doctors told him he'd never beat this cancer without it, but he just couldn't do it anymore. That's when we learned more about naturally healing your body with nutrition and
he went in full force! It worked!! Changing his diet healed his body, even after every health professional we saw told us it wasn't possible. Diet matters, and a healthy diet truly can change your whole life!

Let your kids help you prepare some recipes, especially the ones they may be hesitant to try. Kids are always more willing to try foods they've helped prepare.
